He holds dual nationality, i.e. Spanish and American, and comes from Latin descent. Andres attended a culinary school in Barcelona at the age of 15.

From 1988 to 1990, Jose worked at elBulli. In 1990, Jose was fired from elBulli and decided to move to the United States of America.
At the age of 21, Andres moved to New York City and began cooking in midtown Manhattan at an outpost of a famous Spanish restaurant, Eldorado Petit.
In 1993, Jose was hired to lead the kitchen at Jaleo in Washington, D.C. In the following years, Jose helped the owners of Jaleo to open more restaurants called Café Atlantico, Zaytinya and Oyamel, along with two more outposts.
